Parilya began with a simple belief:

My inspiration begins with my Filipino heritage, where food has always been about family, generosity and gathering around the table.

Those flavours are still at the heart of everything we do.

But Parilya isn’t about recreating tradition.

It’s about taking those memories, respecting where they came from, and allowing them to evolve.

Every dish we serve carries a little of that journey.

The name Parilya comes from the Filipino word for grill.
